The two brands

Two stalls. One kitchen brain. One customer base.

Berliner Haus has the reputation, the truck, and the press. Ciao Babe has the branding and the room to grow. Run right, each one feeds the other.

Berliner Haus

Berlin style doner kebab. Started as a tent at the Denver Christkindl Market in 2024, a food truck in 2025, and a permanent stall at Avanti in September 2025.

  • Proof: strong brand, strong reviews on the Truffle Babe and the carbonara
  • Problem: plated pasta fights a food hall crowd that wants food in hand, and the runway to prove the concept is months, not years

What we found

The honest picture, before anyone sells you anything.

We audited both brands, the websites, the listings, and the numbers before our call. Then we compared it with what you told us on October 6. It all lines up.

The truck carries Berliner

The food truck schedule is fully booked. Berliner Haus has demand. It just does not show up inside Avanti the same way.

Avanti foot traffic is weak

People inside the hall are not finding the stalls, or not choosing them. That is a visibility and offer problem, not a food problem.

Ciao Babe has months of runway

Your words on the call: a few months to decide if Ciao Babe works. That makes Ciao Babe the urgent brand, not the second one.

Plated pasta fights the hall

Avanti guests want finger food they can carry to a table, a bar seat, or the patio. Sit down pasta works against that habit.

DoorDash eats the margin

Volume is high and the rating is 4.8 stars, but delivery and marketing fees leave very little. Direct orders are worth real money.

The websites are not selling

Berliner Haus runs on a thin Wix site with the menu as a picture and hours that disagree with Toast, DoorDash, and Google. Ciao Babe has no website or domain of its own at all.

What we will do

The 90 day plan.

Four moves, in order. Foundation first, then traffic, then pipeline, then margin. No random marketing. Every piece points at covers, catering, and truck bookings.

Weeks 1 to 3: Foundation

Own the digital base

  • Rebuild Berliner Haus as a fast, food first website, shaped like the Portillo's and The Halal Guys sites you picked: big food, simple order paths, catering up front
  • Register and build Ciao Babe's own domain and website so the brand exists outside Avanti's site
  • One source of truth for hours and menus, synced to Google, Toast, DoorDash, and Avanti, so no platform disagrees again
  • Fix the review profile so a thin 3.0 star Yelp page stops being the first impression

Weeks 2 to 6: Traffic engine

Fill both stalls

  • Berlin to Rome passport: one card, both stalls. Buy at Berliner, get rewarded at Ciao Babe, and back again
  • Cross promotion from Berliner's truck, Instagram, and DoorDash audience straight into Ciao Babe
  • In hall visibility: signage, stickers, and offers that catch Avanti guests before they pick a stall
  • One joint SMS and email list with a weekly reason to come back

Weeks 3 to 10: Pipeline

One funnel for catering and the truck

  • One CRM in the Biz Dev App for catering leads, truck bookings, and festival dates
  • Corporate lunch outreach to LoHi and downtown offices, run every week, not once
  • Festival calendar worked on purpose: Christkindl Market, Oktoberfest, Great American Beer Festival
  • Automatic follow up on every inquiry, so no booking dies in an inbox

Weeks 6 to 13: Margin

Keep more of every order

  • Direct ordering push on both websites, with pickup offers DoorDash cannot match
  • Review capture at the counter and on the truck, routed to Google first
  • Monthly scoreboard: covers, direct orders, catering pipeline, and list growth, in plain numbers
  • Quarter two plan set from what the data says, including the Ciao Babe call

That claim is already true, already proven, and already pressed. The job now is making sure Denver hears it every week, and that Ciao Babe gets the same push while there is still time to prove it.
